Tilapia, Zucchini, Polenta, and Red Velvet Cake for Dessert Dinner

We made grilled tilapia, baked zuccini, and a Red velvet Cake (from Scratch)

The zuccini: We sliced up the zuccini, put it on a cookie sheet, put some olive oil on it, then we put some rosemary on it...(Fresh Rosemary from the garden!)
We then put it in the oven, just to heat it up some.
It was delish!!

Grilled Tilapia:
We made 5... (we made extra so Steve could eat some throughout the week)
-We sliced up one orange, two lemons, then got one of those already sliced packets of bell peppers and onions.
We put the fish on a piece of foil, rubbed the fish with some olive oil,
then we put the fruits and veggies into each packet.
we also added (fresh) rosemary and some basil.
we put it on the grill for a few minutes, turning them every so often,
then once they were done, put it on the plate, and we added some feta cheese and avacado.
DELISH!!



We also made palenta.
(Taylor actually did it, it definitly was a "hit" between us and Steve enjoyed it... considering she'd never heard of palenta in her life.. haha.!)









Red velvet Cake...
From scratch...
We had a recipe, so we threw all the ingredients together, and then baked it, then came out to be more like a fudge than anything.
I (Taylor) think we should have looked and paid more attention to how exactly we were to make it, rather than just throw the ingredients together... just me though.
it was good, very dense.
the frosting was not homemade... we bought that.. :)
